Ghee’z a break min

 

I’ve used it afore, but with all the spices you dinna notice

 

Also, if you want your chicken cooked similar to the restaurant (nae stewed til it all breaks up) I sometimes marinate it in some yoghurt, crushed garlic, garam masala, salt and pepper, stick the chicken cubes on kebab sticks and blast them in the oven at 200C for 10 mins afore adding to the sauce

 

I always chuck in a chicken stock cube to the sauce also

I do the chicken on a cast iron ribbed griddle. Marinated first, sometimes just in spices nae yoghurt.

 

Always find cardamom pods are vital in a good curry. Chuck a few in with the rice too.

 

You might be better making your own garam masala as the store ones in the states could be shite.
