(know that sounds weird) apparently similar to roasted garlic, but fermented. so sweet-ish, not as strong a garlic flavour as other garlics, and with an almost balsamic flavour to it. http://en.wikipedia.org/wiki/Black_garlic_(food) i found something online about making it at home yourself. but i'm not about to leave my dehydrator on for 40 days! so a trek through Asian food markets will hopefully prove successful. The most effective thing to do is just to wash off a couple of handfuls of brown rice and chew raw for your breakfast for a few days in a row. Pretty happy with them. I had a failed attempt at bread though. It tasted nice just didn't rise and was stodgy inside. My mate however swears by taking tins of shortbread anytime he goes over to the USA on holiday.
