How do you like your omelettes? 
 

Can’t get enough of them just now. 
This mornings one =
mushroom, cherry tomatoes, onion, spinach, boursin cheese, prosciutto and chilli flakes. 2 eggs.
 

Sometimes 3. Different omelettes, different…

Sounds a lot of filling for not many eggs. Do you add milk to the mix? I never like to add milk. 

For me: 

Chop up some chorizo, some red onion and a few piccolo tomatoes, fry for a minute or two. Add the eggs. Fry on a medium heat until almost fully cooked, chill flakes/powder over the top. 1 minute under the grill.

3 eggs, whisk with a wee bitty of grated cheese and a tiny bit water. 

Fry for a couple mins 

Sping onions on top. 

Fry for a little but more 

Simple and done in about 5-6 mins.

 

1 of a handful of things I can be arsed cooking.

Never add milk to scrambled eggs or Omelettes.

Less filling in Omelettes is the trick and chorizo is a class choice.

I only do it when short on eggs and need to pad it out. Make it 3 eggs and no milk next time and taste the difference.
